Spanish Paella is easy!
First
you need to buy this pan! (It needs to be
imported from
Valencia city).
It
cost €20 approx. Paella can be Chicken paella,
rabbit paella, veggie paella or my favourite seafood paella.
So,
because I like mine’s I will explain mine
(seafood paella):
Ingredients
for 4 Persons
1
cuttlefish
Some
mussels
(previously cooked)
Some
prawns
(previously cooked)
1/2
red pepper
1
tin of passata
(tomato puring)

grs. wide
green bean ( spanish-bachoqueta)
130
grs. large
white lima beans ( spanish-garrafon)
Rice
(This
is important-no valid
basmati or quick rice or whatever rice
NO!
IT MUST TO BE RICE FROM
VALENCIA!!!!!
Erm
well can be rice to do risotto (but it
isn’t the same!!!!!)
Water
(From
Valencia) or ( even better fish broth)
olive
oil ( enough
to cover the bottom of the paella pan)
salt
( to taste)

Bay Leaf
1
level teaspoon of sweet red paprika and colorant
How
to prepare it:
First
you put the cuttlefish in small peaces and fry with lot of olive oil I
use to
put half glass of oil. (In the pan of course).
When
is it fryed, you put the red pepper in small peaces and to passata (1
glass at
least) and fry it!
Meanwhile
you put in another pan the water or broth is better (approx 1 litre)
and boil.
After
that you put the green bean and the lima beans and move it all the
time. 10 min
later you put the rice. Be careful with that. 1 glass of rice per
person. So if
you are 4 people I will recommend 4 and a half glass. And put the hot
water
(all).
You
will see, that the water covers all the rice. Don’t worry,
the rice absorbs the
water. (it needs to be cooked 20 min) Be careful with that. You have to
move the
rice all the time not to be sticky.
You
put the colorant, paprika, the leaves and the salt now. While the rice
is
cooking, you put the prawns and the mussels. And after 20 min you see
the rice
has consistence. And you stop the fire and you put a tap to cover the
paella.
And wait 5
min more.And taraaaaaaaaaaaaaaaaaa a quick and taste paella
done!!!!

Ingredients!

Medium potatoes (Tesco
or Asda) doesn't matter
1
big
onion or 1 and 1/2
medium onion
4
eggs
Chorizo
(I bougth the
Revilla one from Tesco (it says Chorizo de pueblo picante)
sunflower
oil (is
cheaper than olive)
Salt
Antiadherent
Pan (22 cm
approx)
Explanation
Well
first I Fried little
pieces of chorizo in a pan with lot of oil to get the flavour (5-7min)
small fire.
I take out the small pieces of chorizo and I eat it as my dinner!!!
You keep the oil in the pan
You cut the 4 potatoes in small pieces thin or small squares.
You cut the onion in small pieces as well and put all together in the
pan (medium fire)
While is cooking you move the potatoes and onion for not to fry the
potato, due we don't want fried potato we want like soft potato like
potato pasta!
(10-15min)
add new small pieces of chorizo as well sorry forgot!
When you think the potatoes is ready , put the potato and onion in a
bowl andseparate the oil. So the oil you can use it for another
omelette. Make
sure to take out the most of the oil, but don't worry too much!
in other bowl put the eggs and move it.
Put the eggs in the potato bowl.And mix all with a fork and add salt (I
am bad with that)
When it gets like a pasta... put the same pan again with any residual
but not clean by water (use the little oil on there)
with high-medium fire put all the potato on there and move the pan to
don't be sticky the omelette.(8 min)
When you think it is cooked down, put a plate up on the pan and turn
and put the other side (not cooked) in the pan for cooking it.(5-7 min)

Ingredients!
1 kg
beef/pork mince (Spanish if possible)
half
garlic (spanish if possible)
rosemary
2
eggs
flour
1
red pepper (from Almeria please)
1
big onion
1
tomato sauce
olive
oil (from Cordoba)
erm...
erm... Dolmio Sauce (Mediterranean vegetables)
and some more dolmio sauce.
and love!!
Explanation
Cut the garlic in very small peaces (take out the green stuff in the
middle-it makes
you slowly digestions and smelly breath )
Mix it with the
meat and rosemary and make balls. Size ping-pong balls!
Put the egg in a
bowl and mix the balls with the egg and flour later in one pan put oil and fry a
little the meatballs and when finish take out in another plate.
In other pan (a
big one) we make the sauce... first fry onion sliced in small peaces and pepper in small
peaces, be careful with the pepper! Don't burn it!
When onion is gold put the meatballs on that pan and put the tomato
sauce (*)
in small fire...
put salt
and that's it!!!!!
Cut small peaces
of bread and the meatball in the top like a tapa thing!!!
